600ml Brothers Festival Apple
TO MAKE 4 KEBABS
2 Large Boneless & Skinless Chicken Breasts
1 Courgette, cut into eight pieces
2 x Red or Yellow Pepper
1 x Red Onion, cut into eight wedges
8 x cherry tomatoes
4 x kebab skewers (wooden skewers, soak in water prior to cooking)
FOR THE MARINADE
Olive Oil 4 tbsp
Mustard (we like Dijon but you could use any) 2 tbsp
Zest & juice of 1 Lemon
Fresh herbs (rosemary & thyme)
300ml Brothers Festival Apple Still Cider
FOR THE APPLE COLESLAW
1/2 A Red Cabbage, shredded
3 Large Carrots, chopped into matchsticks
1 bunch spring onions, chopped
A small handful of coriander, finely chopped
1 large apple, chopped into matchsticks
Honey 2 tbsp
Apple Cider Vinegar 2 tbsp
Olive Oil 2 tbsp
Juice of 1 Lime
Salt & Pepper to Taste
Festival Apple marinated Chicken Skewers can be enjoyed at BBQ’s, for dinner or even as a starter at a fancy dinner party!
• Put all the marinade ingredients into a large bowl, season with salt & pepper and stir until well mixed. Add the chicken pieces, cover, and marinade in the fridge for at least 2 hours but preferably overnight.
• When your chicken has finished marinating remove from the bowl and throw away the marinade. Skewer your chicken and vegetable pieces onto your 4 kebab skewers and get them cooking on the BBQ or under the grill, turning regularly for around 20-30 minutes or until cooked through.
• Whilst your kebabs are cooking mix together your red cabbage, carrots, red onion, apple and coriander and season well. Mix the olive oil, honey, lime and apple cider vinegar to make your dressing and stir into your coleslaw mix.
• Once your kebabs are well cooked serve on a plate with your apple coleslaw and a nice glass of Brothers Festival Apple Cider over ice.
